Apple Crumble Cookies

Today I want to share an easy and delicious apple crumble cookie recipe that is the perfect for fall! Almost a year ago to the day I made apple crumble cupcakes which were a huge hit our house and this year I wanted to keep the apple crumble flavors going but this time with a cookie. We’re always drooling over the baked goodies in the grocery store and it takes extreme will power to avoid the delicious sweet treats that I so desperately want. Instead I decided to try a recipe I found online that seemed easy enough and let’s face it, healthier than a store bought option packed full of sugar. Yes this recipe containers sugar but it’s far less than you’ll find in an Oreo. Not that I hate Oreo’s, because I certainly do love them but if I can have dessert and not feel guilty well…then I’m winning at life!

What I really love about this cookie recipe is that they are not overly sweet. It has just enough sugar to cure your sweet tooth. They even pair well with your morning coffee and are kid friendly/approved.

This recipe also calls for a food processor. This was something we didn’t invest in up until this past year and I’m so thankful we did. Not only is it great for small batches of biscuit cookies, but it’s great for guacamole, peanut butter balls and so much more! We have an 8 cup model from Cuisinart which is the perfect size.

With 5 simple ingredients and 10 minutes you too can make these delicious apple crumble cookies.

Ingredients:

  • 2 cup all purpose flour
  • 1 cup dried apple
  • 1 stick unsalted butter, chilled and cubed
  • 1 cup sugar
  • 1 large egg

Directions:

Heat oven to 400 degrees

In a food processor add in your dried apple. I wasn’t quite sure what kind of dried apples to use and opted for dried apple chips. They blend up easily in the food processor and avoid a gummy or sticky texture that other dried apples give. Pulse until the apple chips are finely chopped.

Add in the flour, sugar and butter on low until fully combined.

Next add in the egg and pulse for up to a minute until it holds together like a dough. You don’t want it to be too wet and sticky. It will appear slightly dry, almost like Play-Doh.

Roll into 24 balls and place on parchment paper on your cookie sheets. Press down slightly on the top of each cookie to flatten it out and sprinkle with a little bit of sugar on top.

Bake for 8-10 minutes until golden brown.

Notes: If you have the time, you can dry out your own apples to use in this recipe.
