Apple Pie Dutch Baby

Well, according to my husband, this is one of the best things I have ever made!!  I have to admit, it was really delicious, not so super sweet that you feel bad after eating it, but just the right amount of sweetness.

First the Apples –
Start with an apple, my mother called it stewed apples, some people call them fried apples.  Basically, it’s just apples with a little butter, sugar and cinnamon cooked until they are tender.  You can also use canned apple pie filling, that would work great.

The Dutch baby looks so nice in the oven once it starts puffing up.  I used a 5″ cast iron skillet and it was perfect for 2 people.

Look how light and airy this Dutch baby turns out.  The taste of a Dutch baby can be described as a mix between a pancake and French toast.

This Apple Pie Dutch Baby would actually be a great breakfast, if you stop right here and don’t add the ice cream and caramel.  But I am certainly not going to judge you if you want to add the ice cream and eat this for breakfast!

This really is super easy to make, and you probably have all of the ingredients in your cabinet and refrigerator right now, so get in the kitchen and check.  Then make this tonight for dessert, or this morning for breakfast, or this afternoon for a snack, just make it!  Believe me, your family will thank you.

Ingredients:

Stewed Apples

  • 1 apple peeled and cubed
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup water

Dutch Baby

  • 2 eggs
  • 1/3 cup all purpose flour
  • 1/3 cup milk
  • 1/8 teaspoon salt
  • 1/4 teaspoon vanilla
  • 2 tablespoons butter divided
  • vanilla ice cream and caramal sauce (for serving)

Directions:

Stewed Apples

Start cooking the apples before the Dutch baby, they will need to continue to cook while you are preparing and cooking the Dutch baby.

Melt the 1 tablespoon of butter in a small saucepan, over medium heat. Add chopped apples, brown sugar, cinnamon and water. Bring to a boil and turn down to a simmer and cover with lid. Let simmer for about 20-25 minutes, stirring frequently. If liquid is absorbed before apples are tender, add more water. Once apples are very tender, if there is still a lot of liquid in pan, turn heat up and continue to stir until liquid thickens. The apples should be super tender and the remaining liquid should be thick and sticky.

Dutch Baby

Preheat oven to 400 degrees. Put 5″ cast iron skillet in oven while it preheats.

Melt 1 tablespoon of the butter.

Whisk eggs, four, milk, salt, vanilla and the 1 tablespoon of melted butter. Continue to whisk until batter is smooth.

Remove skillet from oven and put the other 1 tablespoon of butter in it, swirl around until melted. Pour batter in skillet onto the melted butter.

Bake about 18 – 22 minutes or until golden brown and puffed. Serve in the skillet, add 2 scoops of vanilla ice cream and drizzle caramel on top.
