Brown Sugar Sandwich Cookies

It’s true, I love brown sugar! It has to be my favorite sugar ever. The texture, the flavor, the smell, the recipes call for you to pack it in (I mean really, pack in more sugar, sign me up) it is just sooooo good. Plus, it’s healthier then white sugar too right? People are always saying the more color something has the better it is for you. So, brown sugar by sheer virtue of it’s brownness is better for you then white sugar. At least that is what I’m going with. Basically, these are Brown Sugar Cookies with a Brown Sugar Frosting in the middle. Sigh, a little morsel of heaven.

For the cookies start by creaming together butter and vanilla.

Add the delicious brown sugar.

Then beat in the eggs.

Add your buttermilk.

At this point the dough looks a bit like it is separating or curdled or something but that is fine.

Add all the dry ingredients. I would like to add that at this point that this cookie dough tastes really good, if your into that kind of thing.

Drop the dough by teaspoonfuls onto a greased cookie sheet.

Bake and allow to cool.

Now for the Brown Sugar Frosting. Beat all of the frosting ingredients together until light and fluffy.

Match up your cookie so that they will make nice little sandwiches.

Pipe a large star or a small swirl of frosting in the center of half your cookies, top with the rest of your cookies.

Ingredients:

For the Brown Sugar Cookies:

  • 1c. butter, softened
  • 1t. vanilla extract
  • 2c. brown sugar, well packed
  • 2 eggs
  • ½c. buttermilk
  • 3½c. flour
  • 1t. soda
  • 1t. salt

For the Brown Sugar Frosting:

  • 1c. butter, softened
  • 2t. vanilla extract
  • 1t. butter flavor
  • 2c. brown sugar, well packed
  • 2c. flour
  • ⅛t. salt
  • 5T. half and half

Directions:

For the Brown Sugar Cookies:

Preheat oven to 400F

Cream the butter and vanilla together until combined.

Add the brown sugar and beat well.

Add the eggs and buttermilk and beat to combine.

Add the dry ingredients and beat until well combine.

Drop by teaspoonfuls onto a greased cookie sheet.

Bake at 400F for 8-10 minutes or until golden brown.

For the Brown Sugar Frosting:

Cream together butter, vanilla, and butter flavoring.

Add brown sugar and beat well.

Add flour and salt, beat in half and half.

Continue to beat until light and fluffy.

Assembling the Brown Sugar Sandwich Cookies:

Put the cookies in pair, try to make the pairs match is size and shape as much as possible.

Onto one of the cookies in the pair, pipe a large star or small swirl of frosting onto it’s center.

Top with the other cookie and smoosh slightly, so that the frosting reaches all the way to the edge of the cookies.

Store in an air tight container in the refrigerator or freeze for later.
