I know, I know, that is a really long name for this recipe, however, I didn’t know how to convey all the yummy ingredients in 2 or 3 words. For my family, no meal is complete without corn as the vegetable. So in an attempt to jazz up the corn this year, I tried this mix and we LOVED it, kids included. So, if your family is into corn like we are, give this a try…
Ingredients:
- 1 (14.75 ounce) can creamed corn
- 1 (15.25 ounce) can corn-drained
- 1 package boxed stuffing mix (I used chicken flavored from Stouffer’s)
- 1/2 cup onion-diced
- 1/2 cup red pepper-diced
- 1/2 cup butter-melted
- 1/2 cup water
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Directions:
Preheat oven to 350 degrees. In a mixing bowl, combine all the ingredients, stir well and spoon into a greased 2-quart casserole dish. Bake, uncovered for 30 minutes.
