Grandma’s Apple Dapple Cake

Ingredients:

Cake:

  • 3 cups  plain flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 1 1/2 cups  vegetable oil
  • 3 eggs
  • 1 cup  packed brown sugar
  • 2 teaspoons vanilla essence
  • 4 cups diced apples
  • 1 cup  chopped walnuts

Topping:

  • 1 cup packed brown sugar
  • 1/2 cup of Butter
  • 1/4 cup thickened cream

Directions:

Cake:

Preheat oven to 350 °F. Grease and flour the bundt pan.

Stir the flour, bicarb soda and salt together and set aside. In a large bowl, cream the oil, eggs, brown sugar and vanilla. Add the flour mixture and mix well. Stir in the chopped apples and nuts.

Pour batter into prepared tin. Bake at 350 °F for 30 minutes or until a toothpick inserted into the centre of the cake comes out clean.

Topping:

In a saucepan, combine the brown sugar, butter and cream.

Bring to a boil and continue boiling for 3 minutes.

Cool slightly and pour over warm cake.
