Grilled Romaine Caesar Salad

This salad is wonderful and it’s easy to put together.  Every part of it is good, but the homemade croutons are the by far the best part!  If you’ve never made your own croutons, you have to try these Homemade Croutons.  I always felt like they would take a lot of time, but they are really very quick and easy.

Just start with the romaine lettuce and throw it on the grill.  You can use an outdoor grill or even easier just use a little indoor grill.  I used my George Foreman grill, and it worked great for this.

Using a bottled salad dressing was a time saver for this salad.  I don’t usually buy salad dressing, but this one was on sale.  My husband actually likes Caesar salads so I figure he would help me use this one.

A Caesar salad doesn’t usually have tomatoes on it, I realize that.  I really didn’t intend to put the tomatoes on my salad, but they were on the counter just screaming to be included in this salad.  In the end I thought they added a lot of brightness and freshness to the salad, so it was a great idea.

Ingredients:

  • 1 head Romaine Lettuce,
  • 1/4 cup Parmesan cheese shredded
  • 2 tablespoons Caesar Dressing
  • 1 cup croutons
  • 1 medium tomato (if desired)
  • cooking spray

Directions:

Spray grill with cooking spray, and begin to heat the indoor grill.

Cut Romaine lettuce head lengthwise in half.

When grill is heated, place lettuce face down onto grill and sit the top down onto lettuce, (no need to press the top down, you don’t want to smash the lettuce). Let cook for about 5 minutes until lettuce is heated and nice grill marks have formed.

Remove from grill and place onto serving place. Top with cheese, croutons, tomatoes (if desired) and drizzle evenly with dressing.
