One of my favorite summer appetizers or snacks! This cowboy caviar is so fresh and addicting. I like to eat it with my favorite Juanita’s corn chips.
Mango Cowboy Caviar
Ingredients
- 1 can black beans
- 1 can corn
- 1 red pepper diced
- 1 mango diced
- ½ large onion diced
- 2 chipotle peppers in adobo
- 1 large lime
- 1 teaspoon Kosher salt

Instructions
- Drain and rinse beans and corn.
- Pour into a medium bowl.
- Add diced red pepper, mango and onion.
- Slice chipotle peppers in half and remove all seeds. (Be careful, they’re spicy!)
- Chop very finely and add to mixture.
- With the help from the Chef, juice the lime over the mixture.
- Add salt and stir to completely combine.
- Serve with corn chips. Keep refrigerated.
