Best Potato Cakes “Ever”

These Leftover Mashed Potato Cakes make an amazing side dish or light dinner or lunch!  these are the perfect way to enjoy leftover potatoes and the flavor combinations are endless!

My grandmother always cooked for a large family. I loved Potato Cakes and asked her to make them often, She would always overestimate when making mashed potatoes. So, she would always fry up mashed potato cakes with her leftovers. As a kid, I refused to even try them. As an adult…. I tried them and LOVED them.

Tips for leftover mashed potatoes refrigerate them to cool the potatoes. They will hold together much better if the potatoes are cold. Keep this step in mind if you are not using leftover mashed potatoes that have been refrigerated.

Ingredients:

  • 2 cups potatoes, Mashed
  • 2 tablespoons onions, Chopped
  • 1/8 teaspoon salt
  • 1 teaspoon oil
  • 1 egg white, slightly beaten
  • 2 tablespoons all-purpose flour
  • pepper

Directions:

In a medium-size bowl, combine potatoes, egg white, onion, flour, salt, and pepper.

Meanwhile, heat oil in a large skillet over medium-high heat.

When hot, put about 2 tablespoons of potato mixture for each cake into the skillet. Cook until well browned, then turn with a spatula and cook the other side until brown.

Continue making takes, keeping first ones warm.
