Slow Cooker Vegetable Beef Soup With Frozen Vegetables

Fall is near in Pennsylvania and I’m looking forward to all of the hearty soups and stews that come along with it.

My sweet mother-in-laws Vegetable Beef Soup Recipe was the absolute best and for the past 10 years I’ve tried replicating it.

While she spent the day soaking bones and making beef broth to make a truly homemade soup, I need the recipe to be quick and simple for busy on-the-go moms and dads. I’ve finally perfected it and can’t wait to share it with you!

A slow cooker and minimal ingredients is what you’ll need to serve a Hearty Vegetable Beef Soup to your family.

Ingredients:

  • 2 lbs Stew Meat
  • 1 28oz can Crushed Tomatoes
  • 1 10oz can Rotel Diced Tomatoes & Green Chiles
  • 1/2 Cup Water
  • 1 Pkg Frozen Mixed Vegetables
  • 6 Beef Bouillon Cubes

This Easy Vegetable Beef Soup is a dump and go recipe. You can add all ingredients to cook on low for 8-10 hours or on high for 6 hours.

I love to serve this with warm Rhodes Crusty Rolls too!

Ingredients

  • 2 lbs Stew Meat
