Ham and Broccoli Twice Baked Potatoes

Ingredients

medium baking potatoes
1
cup
fresh broccoli florets
1
9-oz tub ham, diced
½
cup
shredded Cheddar cheese
½
cup
sour cream
2
tablespoons
milk
2
tablespoons
butter
½
teaspoon
salt
½
teaspoon
pepper
½
box garlic Texas toast
½
cantaloupe
seeded, sliced, and chilled
Instructions
Cook potatoes in the microwave on High 10
to 12 minutes until tender. Slice tops off
potatoes, scoop out potato pulp, and place into
a large bowl. Steam broccoli in a small amount
of water until crisp-tender, about 6 to 8 minutes.
Preheat oven to 400°F. Combine potato pulp,
steamed broccoli, ham, Cheddar cheese, sour
cream, milk, butter, salt, and pepper. Spoon
mixture into potato shells. Place on a foil-lined
baking sheet. Bake 30 minutes or until
thoroughly heated.
Bake toast according to package directions.
Serve sliced cantaloupe on the side.
