Mango Cowboy Caviar

Ingredients

can black beans
1
can corn
1
red pepper
diced
1
mango
diced
½
large onion
diced
2
chipotle peppers in adobo
1
large lime
1
teaspoon
Kosher salt
Instructions
Drain and rinse beans and corn.
Pour into a medium bowl.
Add diced red pepper, mango and onion.
Slice chipotle peppers in half and remove all seeds. (Be careful, they’re spicy!)
Chop very finely and add to mixture.
With the help from the Chef, juice the lime over the mixture.
Add salt and stir to completely combine.
Serve with corn chips. Keep refrigerated.
