Preheat your air fryer to 400°F for about 5 minutes.
Thinly slice the zucchini into very fine rounds.
Lightly spray the air fryer basket with olive oil and arrange the zucchini slices in a single layer. If necessary, cook in two batches for even results.
Spritz the zucchini slices with a bit more olive oil and sprinkle 1 tablespoon of parmesan over them.
Cook the zucchini in the air fryer at 400°F for 7-10 minutes until they turn golden and crispy.
Repeat the process with the remaining zucchini and parmesan for the second batch.
