Instructions
Preheat your air fryer to 375°F while you prepare the fritters.
Grate the zucchini using a box grater or a food processor. Wrap it in a clean kitchen towel and squeeze it firmly to eliminate as much moisture as possible.
In a mixing bowl, combine the shredded zucchini with the beaten egg until fully coated. Then add Parmesan, breadcrumbs, flour, chopped chives, Italian seasoning, salt, and black pepper. Mix thoroughly. If the mixture seems too moist, you can either squeeze the zucchini again or gradually add more flour by the tablespoon until it holds together.
Form the mixture into eight patties, each approximately 3 inches in diameter and half an inch thick, and place them on a clean plate.
Lightly coat the air fryer basket and both sides of the patties with cooking spray. Arrange the fritters in the basket (work in batches if necessary). Air fry for roughly 14 minutes, flipping them halfway, till they are golden and crispy on all sides.
Once cooked, transfer the fritters to a plate lined with paper towels and sprinkle with a little salt if desired. Repeat the process with any remaining batter. Serve them warm, garnished with extra chives and a fresh squeeze of lemon for a zesty finish.
