Bbq Beef Tater Tot Casserole
This BBQ Beef Tater Tot Casserole is the perfect comfort food! A hearty, flavorful meal made with ground beef, baked beans, corn, barbecue sauce, and topped with golden tater tots and melted cheddar cheese.
Ingredients
- 1 lb lean ground beef
- ½ teaspoon kosher salt
- 1 can sloppy joe sauce (15 oz)
- 1 can original baked beans (16 oz, do not drain)
- 1 can corn (15 oz, drained)
- ⅓ cup barbecue sauce
- 1 teaspoon yellow mustard
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ½ teaspoon onion powder
- 1 bag frozen tater tots (32 oz)
- 2 cups shredded cheddar cheese (divided)
Instructions
- Preheat your oven to 375°F. Spray a 9x13 baking dish with cooking spray and set it aside.
- In a large skillet over medium-high heat, brown the ground beef with the salt, breaking it up as it cooks. Drain any excess fat.
- Stir in the sloppy joe sauce, baked beans, corn, barbecue sauce, mustard, and spices. Let the mixture simmer for about 10 minutes to thicken.
- Spread the meat mixture evenly in the bottom of the baking dish. Sprinkle 1 cup of shredded cheese on top, then layer the frozen tater tots over the cheese.
- Bake for 30-35 minutes, until the tater tots are golden brown and the casserole is bubbling. Sprinkle the remaining cheese on top and bake for an additional 3-5 minutes until melted.
- Let it cool for 5-10 minutes before serving. Garnish with thinly sliced green onions if desired.
