In a microwave-safe bowl, melt 1 ¾ cups of chocolate chips by heating in 15-second intervals, stirring until completely smooth.
Place the melted chocolate onto parchment paper and use a rubber spatula to spread it out in a rectangular shape.
Layer the pretzels over the chocolate until everything is nicely covered.
Chop the green apple into small pieces and pat dry with a paper towel to remove excess moisture, preventing the caramel from becoming too runny.
Unwrap the caramels and microwave in 15-second increments, stirring until fully melted. Mix the diced apples into the caramel and spread this mixture over the pretzels.
Transfer the bark to the fridge and allow it to set for 30 minutes.
Once set, melt the remaining chocolate and drizzle it on top of the bark.
Chill again for 1 hour, then slice the bark into bite-sized pieces.
Keep the bark in the fridge until you're ready to serve.
