In a large bowl, blend together the Greek yogurt, olive oil, lemon juice, garlic, coriander, paprika, cumin, cayenne, cinnamon, black pepper, and kosher salt to prepare the marinade.
For the Chicken:
Place the chicken thighs on a cutting board covered with plastic wrap and pound them flat to about ½ inch thickness using a meat mallet.
