Once the beef is browned, add the chopped onion and cubed bell peppers. Continue to cook until the vegetables are softened, stirring occasionally.
Mix in the cream cheese until fully incorporated into the beef and vegetable mixture. Remove the skillet from heat.
Layer the provolone cheese slices evenly over the beef mixture, covering it completely.
Place the skillet in the preheated oven and bake for about 15 minutes, or until the cheese is melted and bubbly. Remove from the oven and serve hot.
