This classic Russian salad, known as Olivier, combines tender potatoes, carrots, and eggs with savory bologna or ham, all enveloped in a creamy mayonnaise dressing. A perfect side dish for gatherings or a hearty meal on its own.
Fill a large pot with water and bring it to a vigorous boil. Introduce the potatoes and carrots, cooking them until they are tender and easily pierced by a fork, approximately 20-30 minutes. Concurrently, boil the eggs for about 11 minutes. Allow all the items to cool at room temperature after cooking.
For Assembly:
Once cooled, dice the potatoes, carrots, bologna or ham, pickles, onions, and eggs into small cubes.
In a large mixing bowl, combine all the diced ingredients thoroughly.
Gently fold in the mayonnaise, ensuring every piece is coated nicely. Season with salt and pepper to taste, and if desired, sprinkle dill on top for added flavor.
