Mexican Cauliflower Rice

Cauliflower rice is all the rage…and I agree with it.  This Mexican Cauliflower Rice tastes traditional but with a fraction of the calories!

  • 1 package of frozen 12 oz or fresh cauliflower rice
  • 1 Tbsp olive oil
  • 1/2 red onion chopped
  • 2 cloves of garlic minced
  • 2 Tbsp tomato paste
  • 1 tsp of red pepper flakes omit if you don't like spice
  • Salt and Pepper to taste
  • 1/2 cup chopped cilantro


  • Prepare the cauliflower rice following package instructions. Heat the olive oil in a large skillet over high heat and add in the onion saute for 3-5 minutes or until softened. Add in the garlic and saute for an additional minute making sure the garlic doesn't burn. Stir in the tomato paste and season with red pepper flakes, salt and pepper.
  • Add in the cauliflower rice and mix well. Add salt to taste. Cook until heated through. Remove the pan from the heat and stir in cilantro.


Cauliflower rice needs a lot of salt. Make sure you taste your food while you are cooking!
