Preheat your oven to 400°F and line a rimmed baking sheet with parchment paper. Cut the cheddar cheese into 30 equal cubes and set aside 30 whole cranberries from the sauce.
Slice the smoked sausage into ½-inch thick pieces and arrange them in a single layer on the prepared baking sheet.
Bake for about 15-20 minutes, until the sausage is turning brown at the edges.
Once baked, take the pan out of the oven and place a cheese cube on each sausage slice.
Next, add a whole cranberry on top of each cheese cube, and secure them with a skewer.
Arrange these yummy bites on a serving platter and sprinkle some parsley for a touch of green. Serve with the extra cranberry sauce on the side for dipping!
