Instructions
Start by preparing the ground beef if it's not cooked yet. In a separate bowl, combine the cottage cheese and 2 cups of mozzarella until smooth.
Pour a portion of the spaghetti sauce at the bottom of your crockpot, spreading it out evenly. Layer 1/3 of the cheese mixture over the sauce. Scatter some cooked ground beef over the cheese. Place a layer of uncooked lasagna noodles on top, breaking them to fit if necessary. Alternate the direction of the noodles as you layer.
Add another layer of sauce over the noodles, and then repeat the layers: cheese mixture, ground beef, and lasagna noodles. Continue this layering process until all ingredients are used, finishing with a final layer of sauce on top.
Cover the crockpot with the lid and cook on low for 4 to 6 hours, or if you're short on time, set it to high and cook for 2.5 to 3 hours.
For cleaner slices, let the lasagna sit in the crockpot for about 10-15 minutes after turning off the heat before cutting.
Optionally, sprinkle an extra layer of mozzarella cheese over the top right before serving for an added cheesy finish.
