Heat a large skillet (12-inch) over medium heat. Cook the bacon pieces until crispy, then transfer them to a plate lined with a paper towel.
In the same skillet, cook the sausage slices until they are browned. Remove and set aside with the bacon.
Add the diced onions and bell peppers to the skillet, cooking them in the remaining bacon fat until they become soft and tender.
Lower the heat to medium-low, then add the chopped cabbage, minced garlic, smoked paprika, Cajun seasoning, salt, pepper, and optional red pepper flakes. Stir and cook the cabbage for about 5-6 minutes, stirring frequently, until it starts to soften.
Add the crispy bacon and browned sausages back to the skillet. Stir everything together, cooking for another 2-3 minutes until fully heated through.
