Instructions
In a large bowl, mix together olive oil, yellow mustard, sweet honey, tarragon, onion powder, and sea salt until well combined.
Rinse and pat dry the baby potatoes. Cut them into 3/4 inch cubes, ensuring they are no larger than 1 inch.
Add the cubed potatoes to the mustard mixture and toss until evenly coated.
Place the potatoes in the air fryer basket in a single layer. Cook at 400°F for 15-20 minutes, shaking the basket halfway through.
Check the potatoes with a fork to ensure they are tender. If needed, continue to air fry for an additional 3-5 minutes.
