shredded aged cheddar cheese

apples
peeled, cored, and shredded

strips bacon
cooked and crumbled (optional)

cup
flour
or rice flour

large egg
1
tablespoon
lemon juice
1
teaspoon
dijon mustard
1/4
teaspoon
cinnamon
salt and pepper to taste
oil for shallow frying
Instructions
Use a tea towel to wring out as much liquid as possible from the shredded apples. (Save the juice for a refreshing drink!)
Combine all ingredients except the oil.
Heat the oil in a skillet over medium heat.
Drop heaping spoonfuls of the apple mixture into the pan, shaping into fritters.
Cook until golden brown, about 2-4 minutes on each side.
Drain on paper towels.
