Start by freezing the bacon slices, as this will make them easier to chop when you're ready.
Wash the Yukon Gold potatoes and cut them into cubes. To avoid browning, place the cut potatoes in a bowl of water.
Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, drain the potatoes and add them to the skillet. Season with salt, ground black pepper, and Old Bay® seasoning to your taste. Cook for about 10 minutes, stirring frequently, until the potatoes are golden brown.
Chop the bacon and add it to the skillet. The bacon fat will help cook the potatoes further. Stir occasionally.
When the bacon is cooked, add the minced garlic and stir to combine. Adjust the heat as needed and let the garlic cook until fragrant, about one minute. Add fresh parsley to taste.
Just before serving, drizzle pure maple syrup over the potatoes and stir. Let it cook for an additional minute to allow the potatoes to caramelize.
Serve the potatoes warm with a sunny-side-up egg on top and enjoy!
