In another bowl, mix together the flour, baking powder, and salt. Gradually add this to the wet mixture, combining little by little.
If your dough seems crumbly, continue mixing for another 30 seconds to a minute. It should start to pull away from the bowl nicely.
If it's still too dry, transfer the dough to your countertop. Dust the surface as needed, wet your hands, and knead it till it's smooth.
Do not chill the dough! Instead, divide it into 2-3 manageable portions. Roll each on a floured surface and cut to your desired shape, keeping them around 1/4 inch thick.
Bake in your preheated oven for 6-8 minutes. Allow the cookies to cool on the sheet until firm, then transfer them to a cooling rack.
