Instructions
Preheat your oven to 400°F. Poke holes in the sweet potatoes using a fork, then bake for 50 minutes to 1 hour until tender.
Let the sweet potatoes cool slightly, then scoop out the insides into a mixing bowl. Add melted butter, sugar, eggs, vanilla, cinnamon, salt, and half-and-half. Mash until smooth.
Transfer the mashed sweet potatoes into a 9 x 13 baking dish and spread evenly.
For the topping, mix softened butter, brown sugar, and flour until it resembles coarse crumbs. Sprinkle over the sweet potatoes.
Bake for 20-25 minutes until warmed through and the topping is golden brown. Cover with foil if topping browns too much.
