Add the minced garlic and cook for an additional minute, stirring frequently. Transfer this mixture to a bowl and let it cool.
In the same bowl, combine the ground chicken, panko breadcrumbs, Buffalo sauce, and most of the crumbled blue cheese. Season with salt and pepper. Mix gently by hand, being careful not to overwork the mixture to avoid a dense texture.
Form the mixture into 4 patties. Reheat the skillet over medium heat and add the remaining tablespoon of olive oil. Cook the patties for about 5 minutes on each side, or until they reach an internal temperature of 165°F, as measured with a meat thermometer.
If desired, brush the cooked patties lightly with melted butter. Serve on buns with additional blue cheese crumbles and Buffalo sauce. Optional garnishes include crisp lettuce and tomato slices. Enjoy!
