Start by seasoning the cubed chicken in a medium mixing bowl with salt and pepper. Add ¼ cup of teriyaki sauce and mix thoroughly to coat the chicken. Cover and refrigerate for 30 minutes to 1 hour.
For the Noodles:
Heat 2 tablespoons of cooking oil in a wok or deep skillet over medium-high heat. Add the noodles and cook for 1-2 minutes until they become crispy, then flip and cook for another 1-2 minutes. Remove the noodles and place them on a plate.
For the Chicken and Vegetables:
In the same wok, add 1 tablespoon of oil and the marinated chicken. Stir-fry for 6-8 minutes until the chicken is browned and cooked through. Remove and set aside.
