Instructions
Preheat your oven to 350°F and line your baking sheets with parchment paper.
In a large bowl, beat the softened butter and brown sugar together for about 2 minutes on medium speed.
Add the egg and vanilla, continuing to beat until well incorporated.
Mix in the oats, flour, and baking soda just until combined.
Gently fold in the chocolate chips, coconut, and pecans.
Scoop about 1 ½ tablespoons of dough for each cookie and place them on the lined baking sheets, leaving space between each.
Bake for 12-14 minutes or until the edges are golden brown.
Let the cookies cool completely on the baking sheet before transferring to an airtight container.
