This quick and easy Egg Roll Stir Fry packs plenty of flavor with lean ground beef, fresh vegetables, and a savory sesame-ginger sauce. Perfect for a speedy weeknight dinner or meal prep!
1/4cuplow sodium soy sauceor coconut aminos, or Bragg's liquid aminos
2Tbspstoasted sesame seeds
Instructions
In a small bowl, combine minced garlic, ginger, sesame oil, and soy sauce. Set aside for later use.
In a large skillet over medium-high heat, cook the ground beef, breaking it apart with a spoon until it’s thoroughly browned.
Add matchstick carrots, green onions, and shredded cabbage to the skillet. Stir-fry for about 3 minutes until the vegetables begin to soften.
Introduce the soy sauce mixture to the skillet. Stir-fry everything together for an additional 4 minutes or until the veggies are tender yet still crisp.
Serve individual portions topped with toasted sesame seeds and additional green onions if desired.
