Instructions
Preheat your oven to 375°F and lightly grease a 9x13 baking dish.
In a skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for about 1 minute.
Then, toss in the diced onion and bell peppers, cooking until they soften, around 5 minutes.
Stir in the black beans and taco seasoning, mixing well until warmed through. Remove from the heat.
Lay 2 tortillas in the bottom of the prepared baking dish.
Spread half of the seasoned bean mixture over the tortillas, followed by shredded chicken, enchilada sauce, and a generous layer of cheese.
Add another layer of tortillas on top and repeat the layering process, ending with a thick layer of cheese.
Cover the dish with foil and bake for 15 minutes. Then, remove the foil and bake for an additional 5 minutes until the cheese is golden and bubbly.
Once out of the oven, let it cool for a few moments and sprinkle with chopped green onions to add a fresh touch.
