diced bacon

cubed sweet potatoes
from 2-3 medium potatoes, cut into 1/2-inch cubes

ground cinnamon

of pure maple syrup
Instructions
Place the diced bacon in a large skillet and heat over medium.
Cook the bacon, stirring occasionally, until fully cooked and beginning to crisp up, about 10-15 minutes, depending on the thickness.
Use a slotted spoon to transfer the bacon to a paper towel-lined plate, then set it aside.
Carefully remove all but 2 tablespoons of the bacon fat from the skillet, then return it to the heat.
Add the cubed sweet potatoes to the skillet and sprinkle with cinnamon.
Cook the sweet potatoes for 10-15 minutes, stirring often, until they become tender when pierced with a fork.
Stir the cooked bacon back into the skillet with the sweet potatoes, then drizzle with maple syrup before serving.
