Instructions
Preheat your oven to 475 degrees Fahrenheit.
In a large microwave-safe bowl, mix the diced butter, chopped rosemary, and red pepper flakes. Heat in the microwave for about 1 minute, stirring every 30 seconds until the butter is completely melted.
Add the potato slices to the melted butter mixture along with 1 1/2 teaspoons of salt and a dash of black pepper. Toss thoroughly to coat the potatoes evenly.
Spread the potatoes out in a single layer in a 9-by-13-inch metal baking dish. Bake in the preheated oven for 15 minutes until the bottom side turns a nice golden brown.
After 15 minutes, carefully flip the potatoes and return them to the oven for another 15 minutes until the other side is also golden brown.
Next, add the chicken broth and the smashed garlic to the dish. Continue baking for another 15 minutes until the potatoes are tender and most of the broth has absorbed.
Once done, transfer the beautifully cooked melting potatoes to a serving platter.
