Place the baby potatoes in a bowl and soak them in cold water for about 5 minutes. Use a knife to carefully scrape off the skins.
Cut the potatoes into uniform pieces. In a large pot, bring salted water to a boil. Add the potato pieces and cook them until they are just tender. Drain the potatoes and set them aside.
Finely chop the green onions and dill, and set them aside. Slice the bacon into 1/2-inch cubes. For easier cutting, consider placing the bacon in the freezer for a few minutes before slicing.
Heat a skillet over medium-high heat. Add the bacon and cook until it’s crispy.
Once the bacon is done, combine it with the cooked potatoes, fresh dill, and chopped green onions. Serve the dish warm and enjoy!
