Instructions
Preheat your oven to 400°F.
Cut the bell peppers and onions into slices.
Cover a baking sheet with parchment paper and lightly coat it with cooking spray (olive oil or avocado oil).
Spread the sliced vegetables on the baking sheet. Give them a light spray with cooking spray, then season with 1 tsp kosher salt and freshly ground black pepper.
Bake the vegetables at 400°F for 30 minutes, stirring occasionally to avoid burning and sticking.
While the veggies are baking, mix the beef with garlic powder, onion powder, dried Italian herbs, the remaining 1 tsp kosher salt, black pepper, Worcestershire sauce, and balsamic vinegar.
Once the vegetables are done, take the baking sheet out of the oven and spread the seasoned beef evenly over the vegetables.
Raise the oven temperature to 425°F and return the baking sheet to the oven. Bake for an additional 20 minutes.
Remove the baking sheet from the oven and place Swiss cheese slices over the beef. Broil for 2 minutes or until the cheese is melted and golden brown.
