Cajun Shrimp Toast

Ingredients:

  • 16 ounces medium shrimp, peeled, deveined
  • 3 tablespoon olive oil
  • 2 cloves garlic, minced
  • salt and ground black pepper, to taste
  • 2 tablespoons freshly grated Parmesan
  • 1 French baguette, ends trimmed and cut into 1/3-inch slices
  • 1 tablespoon cajun seasoning
  • 2 tablespoons chopped fresh parsley leaves (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 1/4 teaspoon smoked paprika
  • pinch of cayenne pepper – more if desired
  • 3 teaspoons of Tabasco hot sauce

Directions:

Preheat oven to 375F. Combine olive oil and minced garlic in a small bowl

Slice baguette into 1/2 inch slices and lay flat on a baking sheet, then brush them with the garlic olive oil on both sides.

Bake for a total of 7-8 minutes at 375 degrees, flipping once halfway through the cook time.

Remove

Turn oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.

Place shrimp in a single layer onto the prepared baking sheet.

Place into oven and roast just until pink, firm and cooked through, about 6-8 minutes.

In a large bowl, combine shrimp, garlic powder, onion powder, pepper, smoked paprika, and cayenne pepper.

Add parmesan cheese and hot sauce to the shrimp and stir all together

Top each baguette with 2-3 shrimp and drizzle a little of the sauce.

Garnished with parsley, if desired.
