Cheesy Amish Breakfast Casserole

Two of my favorite things at breakfast are potatoes and bacon…..add in some cheese and I am one happy chick. Yes, I said chick….but that is not the point of this post.

The point of this post is that nothing can make me happier in the morning than a heaping plate of cheesy, salty, gooey goodness served in one bowl. Throw in the fact that it is super easy to make and even my pickiest of eaters was calling for seconds and you have one happy mama! I came across this recipe for Cheesy Amish Breakfast Casserole on Pinterest.

To be honest…I immediately thought of visits to Amish Country here in Ohio with the hubby and my kids and the fact that I never leave there without cheese. What does that say about me?! I digress. Start off by heating a large skillet over medium high heat. Once hot, add in one whole pound of diced up bacon and one chopped onion. I have tried this recipe with a good ole hickory smoked bacon as well as with turkey bacon another time. I can honestly say that either way was delicious. If you are trying to watch you calories like I am (so far I am just watching them…not actually measuring them) feel free to lower the fat content by using the turkey variety. Once the bacon is evenly browned, drain and transfer to a large bowl. Stir in 4 cups of thawed shredded hash browns, 9 beaten eggs, 2 cups cheddar cheese, 1 1/2 cups cottage cheese, and 1 1/4 cups shredded swiss.

Yes…..three types of cheese. Stir all of this together and pour into a 9 x 13 baking pan that has been coated with a non stick spray or butter. Bake for about 45 minutes at 350 degrees. Before cutting it…and this will be hard…let sit for about 10 minutes before cutting and serving. I kid you not this is the most difficult part of this whole recipe.

Cheesy Amish Breakfast Casserole

A wonderfully simple cheesy breakfast casserole for the whole family!

Ingredients
  

  • 1 pound sliced bacon chopped
  • 1 onion diced
  • 4 cups shredded style hasbrown potatoes
  • 9 eggs beaten
  • 2 cups shredded cheddar
  • 1 1/2 cups cottage cheese
  • 1 1/4 cups shredded swiss

Instructions
 

  • Preheat oven to 350 degrees.
  • In large skillet, cook diced bacon and onion until bacon evenly browned.
  • Drain and place in large bowl.
  • To the bowl, add all other ingredients.
  • Pour into lightly greased 9 x 13 pan.
  • Bake for 45 minutes then remove and let cool for 10 minutes before serving.

Notes

I have tried this with turkey bacon as well as low fat cottage cheese...no difference. Still awesome.
