Dutch Almond Boterkoek

Ingredients :

  • 2 cups flour
  • 1 tsp baking powder
  • 2/3 cup sugar
  • 8 oz unsalted butter, remove from fridge 1-hr before using
  • 1 ½ tsp almond extract
  • 1 pinch of salt
  • 1 egg yolk
  • ½ egg white
  • Sliced almonds

Directions :

Preheat oven to 325°

Grease a 1 ½” x 8” round cake pan and dust with flour

Mix the flour, baking powder and sugar

Cut in the butter

Mix well

Add the almond extract, salt and egg yolk

Mix well until very smooth (grease hands and knead dough)

Place the dough into the prepared pan and press down firmly

Brush top generously with the egg white

Place sliced almonds over top

Bake at 325° for 30 minutes

Cool before cutting
