I love escaping reality for a few days and indulging in delicious local cuisine.  I never say ‘no’ to two desserts while on vacation because, I mean, isn’t that what vacation is for?

But coming home is never easy.  My body always has a tantrum when I return.  The lack of sleep, lack of exercise and healthy foods, airport food, and the time change…it all sends my entire system into a state of shock.  And let me tell you: that’s not fun, for anyone.

One of the first things I did when I got home was make a giant run to Safeway to pick up lots of produce.  I planned to juice a lot of it to eat with my breakfasts.

One of the recipes I made is below.  It’s full of nutrients: beets for the betaine (good for the heart and liver), kale and cucumber for the vitamin K (helps in the process of blood clotting) and lemon and apple for the vitamin C (antioxidant that helps eliminate free radicals in the body.  It’s also good for the immune system).

What a delicious way to start the day!

Green Detox Juice

Ingredients
  

  • 1 green apple
  • small piece of ginger
  • 1 beet
  • 1 cucumber
  • 5 stalks of kale
  • 1 lemon

Instructions
 

  • Place all ingredients into a juicer and enjoy immediately!
