Lemon Poppy Seed Muffins

These are really easy and quick muffins to throw together even on a busy morning. If you don’t have any poppy seeds, these are great plain lemon muffins!

Ingredients:

  • ½ cup (1 stick) butter, softened
  • 1½ cups sugar
  • 2 eggs
  • Grated zest of 1 lemon
  • Juice of 1 lemon
  • ½ cup half and half
  • 2¼ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1½ tbsp poppy seeds

Directions:

Preheat oven to 375°F and grease or spray muffin tins.

In a medium mixing bowl, cream together butter and sugar.

Add eggs and mix until combined.

Add zest, juice, half and half and mix.

Slowly add flour, baking powder, salt and seeds until combined.

Use an ice cream scoop to divide between muffin wells.

Bake for 15-20 minutes or until tops are lightly browned.

Let cool completely before you drizzle with optional Lemon Glaze.

Notes

Optional Lemon Glaze – 1 cup powdered sugar and 1 tbsp lemon juice. Mix and drizzle over muffins.
