Ingredients

cups
of apple chunks
peeled and cut into chunks, I use Granny Smith
1 ½
tsp
cinnamon

cup
cold water
1
tsp
vanilla

tsp
Cornstarch

egg roll wrappers
3
tsp
granulated sugar
Instructions
Mix the water with cornstarch in a small pan.
Add the apples, sugar, and vanilla.
Simmer on medium heat until the apples start to soften.
Pour the apple mixture into a bowl.
Set aside to cool for about an hour.
Once cooled, preheat the oven to 350°F.
Lightly flour your work surface and lay out the egg roll wrappers.
Spoon ⅓ cup of the apple mixture into the center of each wrapper.
Dab the edges of each wrapper with water using your fingers.
Fold in all four sides about ¼ inch to secure the filling.
Roll the wrapper lengthwise until fully rolled.
Seal with a touch of water.
Place the rolled wrappers on a parchment-lined baking sheet.
Lightly spray with cooking spray and place on the center rack of the oven.
Bake for 25 to 30 minutes.
Sprinkle with cinnamon sugar, a dusting of confectioner’s sugar, or drizzle with a simple glaze made from confectioner’s sugar and milk.
