Preheat your oven to 350°F and lightly coat a large loaf pan with cooking spray.
Grate 3/4 of the cheddar cheese and cut the remaining cheese into small cubes.
In a large bowl, combine the ground beef, 3/4 of the crumbled bacon, 1/3 of the grated cheddar, beaten eggs, panko breadcrumbs, mayonnaise, Worcestershire sauce, kosher salt, black pepper, 2 tablespoons of ketchup, and mustard. Mix gently until just combined to avoid overmixing.
Place 1/3 of the meat mixture into the bottom of the loaf pan, creating a small well in the center.
Fill the well with the remaining grated cheddar cheese, then cover with the rest of the meat mixture.
Spread the remaining ketchup over the top and place the loaf pan on a baking sheet.
Bake for 60-65 minutes, then allow it to rest for an additional 10 minutes outside of the oven.
Garnish with the remaining bacon crumbles and finely diced cheddar cheese before serving.
