Instructions
In a skillet, heat olive oil over medium-high heat. Add the ground beef, breaking it apart as it cooks and season with salt and pepper.
Once the beef has browned, add the diced onion, bell pepper, and minced garlic. Sauté the mixture for about 3-4 minutes until the vegetables are tender and aromatic.
Stir in the paprika and oregano, mixing well to combine the flavors.
Incorporate the rice into the skillet, ensuring it gets coated in the beef and vegetables.
Add the beef broth and diced tomatoes, bringing the mixture to a boil, then decrease the heat and allow it to simmer.
Cover the skillet and let it simmer for 18-20 minutes, or until the rice is cooked through and has absorbed the broth.
Fluff the rice and taste to adjust the seasoning if needed. If desired, sprinkle shredded cheddar on top and let it melt before serving.
