Preheat your oven to 425°F. Prepare two large baking sheets by lining them with parchment paper.
Arrange the potato wedges, with the skin side facing down, on the prepared sheets. Drizzle the olive oil over them. Season with pepper to taste. Bake for about 1 hour, or until the wedges are golden and crispy. Allow to cool for 5 minutes.
In the meantime, mix the lime zest and sea salt in a small bowl.
Transfer the baked wedges to a serving dish. Sprinkle with the lime salt mixture and chili slices. Serve with lime wedges on the side.
