Instructions
Gather all the required ingredients for the recipe.
For Chicken:
Begin by seasoning chicken breasts with salt.
Create a pocket in each chicken breast without cutting all the way through, and fill them with mozzarella cheese.
Press the edges of the chicken together gently to keep the stuffing inside.
Prepare three separate bowls: one with flour, another with beaten eggs, and the last one with breadcrumbs.
Coat each stuffed chicken breast in flour, shaking off any excess flour.
Dip the floured chicken into the beaten eggs, then roll it in breadcrumbs to coat evenly.
In a large skillet, heat vegetable oil over medium heat.
Fry the chicken for about 4-5 minutes on each side until golden brown.
For Baking:
While the chicken is frying, preheat your oven to 350°F.
Spread two-thirds of the marinara sauce in a baking dish, place the fried chicken on top, then pour the remaining sauce over it.
Top with grated Parmigiano-Reggiano and chopped basil.
Bake for about 20 minutes until it is hot and bubbly.
