This twice baked potato casserole features creamy mashed potatoes blended with cheddar cheese and topped with crispy bacon and green onions. A perfect comfort food dish for gatherings and family dinners!
Preheat your oven to 400°F. Rinse the potatoes and stab them with a fork to create holes. Place the potatoes directly in the oven and bake until they are fork-tender, approximately 45-60 minutes.
After removing the potatoes from the oven, let them cool briefly. Lower the oven temperature to 350°F.
Cut each potato in half lengthwise, scoop out the insides, and place the flesh into a large mixing bowl.
Add butter, half & half, and sour cream to the potatoes, then mash until creamy. Include one cup of cheese and season the blend, stirring until uniform.
Spread the potato mixture into a greased 9x13 inch casserole dish, topping it with bacon and the remaining cheese.
Cover the casserole with aluminum foil and bake at 350°F for 20 minutes. Remove the foil and continue baking for an additional 5 minutes to achieve a golden top. Garnish with green onions before serving.
