Banana Cake with Cream Cheese Icing

Ingredients :

  • 2 cups all-purpose flour
  • 1 1/2-tsp baking powder
  • 1 tsp baking soda
  • 1/2-tsp salt
  • 1 1/2-cups granulated sugar
  • 1/2-cup margarine
  • 1/4-cup buttermilk or sour milk
  • 1 cup mashed ripe bananas (3-4 bananas)
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup buttermilk or sour milk

Frosting:

  • 1 package 8 ounces cream cheese
  • 1/4 cup margarine
  • 1 1/2 cups icing sugar, sifted

Directions :

Cake:

Combine flour, baking powder, baking soda, and salt in a large mixer bowl

Add sugar, margarine, 1/4-cup buttermilk, and banana

Beat on medium speed for 2 minutes

Add eggs, vanilla, and 1/4-cup buttermilk

Beat on medium speed for 1 minute

Spread batter evenly in 2 greased 9″ round cake pans

Bake at 350*F for 30 to 40 minutes or until toothpick comes out clean

Cool 10 minutes, then remove from pans and cool completely

Frosting:

Beat cream cheese and margarine together on medium speed of electric mixer

Add icing sugar, beating until smooth

Frost cake layers
