- 3 cups beef broth (vegetable or chicken broth will work, too)
- 2 garlic cloves, minced
- 1-2 Tbsp tomato paste (optional
- 2 cups chopped cabbage
- 1⁄2 onion
- 1⁄2 cup green beans
- 1⁄2 cup chopped carrot
- 1⁄2 cup chopped zucchini
- 1⁄2 teaspoon oregano
- 1⁄2 teaspoon basil
- salt & pepper
optional: cooked ground beef, leftover shredded chicken, etc.
Spray pot with nonstick spray.
Saute the chopped onions, carrots, and minced garlic cloves for 5 minutes.
Add the remaining ingredients, EXCEPT zucchini.
Season to taste with salt and pepper.
Simmer for a few minutes until veggies are tender, then add the zucchini (and any meat, if using) and simmer for another 5-10 minutes.
