Honey Lime Fruit Salad

Can someone please wake me when the sun decides it’s ready or just willing to work again? This dark way too early deal isn’t working for me. Frankly I need some dang sunshine to operate around here. Believe me when I say… I will be complaining about this until February or March, Logan is soooo lucky isn’t he?

Well, because a pick me up is most likely needed by every single one of us ALREADY, (even though it’s only been five days since the time change) enter a delicious bright fruit salad to save the day. Oooooo, I can feel the sun. But before diving face first into this bowl on sunny days let’s visit how this fruit salad came about.

So I was at the store, pretty much crying because I don’t handle the whole getting dark early business and low ‘n behold they still had peaches. Just sitting there. No stampede anywhere in sight. Seriously!? Whaaaat? Where did these come from? Actually it’s probably better I don’t know. And since peaches mean sun and all things pretty – they were immediately adopted and brought to their new forever home.

It’s probably for the best that I use full disclosure here and admit – I did not come home with just two peaches as this super delish fruit salad requires. I came home with an embarrassing amount, enough to make any Sam’s Club or Costco store jealous. And I’m proud. In turn began my peach everything for the week!

One of the things that came from the peach acquisition was this awesome summer-esque fruit salad. It’s seriously a bowl of sunshine. No joke. So much freshness in each bite. Little rays poking out through the fresh kiwis and strawberries. Ohhh my! Can I just live in this fruit salad bowl until March or April? Pretty puhhhlease.

It’s a super easy throw together sort of deal too. And oh my goodness can you imagine bringing this pretty bowl to a party/gathering. Make ‘em all jealous that your pretty face brought such a pretty AND delicious plate! Doooo it!

Now in the case of “roughly chopped” that just essentially means bite size. And whatever that size is to you works. I try to chop mine small enough that I can get multiple pieces of fruit in each spoonful. Because the only thing that can make fruit better is MORE fruit! Duh!

Smidge of advice: if you are a fruit washer, which is totally the way to be, you never know what that fruit’s been up to – you want to make sure your fruit is uber dry before cutting. Strawberries especially are notorious juice makers AND any moisture on them from washing makes their juice ratio sky rocket. Although strawberry juices are great and totally what you want sometimes, it can prevent the fruit salad from having that great fresh quality if it’s going to be sitting. But to be honest this salad either way is still soooo good. Seriously can’t go wrong.

Honey Lime Fruit Salad

Ingredients
  

  • 1-2 tablespoons fresh lime juice or 1 lime juiced
  • 3 tablespoons honey
  • 1 pound strawberries hulled and roughly chopped
  • 2 small/medium peaches pitted, peeled and roughly chopped
  • 2-3 kiwi peeled and roughly chopped
  • 1 cup blueberries or 1 pint

Instructions
 

  • In a small bowl mix fresh lime juice and honey.
  • In a serving bowl combine all fruit.
  • Pour honey lime mixture over fruit. Stir to coat.

Notes

NOTES: Make sure all fruit is completely dry prior to cutting. This will reduce the amount of liquid the fruit gives off and will help to keep your fruit salad fresh! Any of the fruit can easily be swapped out in this recipe, whatever you fancy or is in season is fair game. You can keep the salad refrigerated up to 1 day just toss again before serving.
